in 7 easy steps:

1. Buy some fresh organic tortillas (Marczyk’s are awesome, Whole Paycheck sometimes has them too).

2. Separate and brush both sides with canola oil.

3. Re-stack and cut into 4 wedges.

4. Line as many baking sheets as you have with foil and lightly brush some oil on it.

5. Lay out the chips in a single layer on the pan, and sprinkle with course salt. You can experiment with different flavors like chili powder, garlic powder, paprika, etc. You can also squeeze some lime over them before seasoning.

6. Bake in preheated 400° oven for approx. 10 minutes. You need to watch them carefully at the end; they go from golden to burnt in seconds. I switch the pans from top to bottom and front to back halfway through for even cooking.

7. Dump in an airtight container, let cool a bit, and munch away.

Note: Not all the chips will be perfectly crisp. You may get some that are like chewing corn-flavored shoe leather (I happen to like these ones). Letting them sit on the pan a few seconds will help crisp them up but can also overcook them if you aren’t watchful.
